Mint, hUNey & lemon dressing
“Don’t overthink. Just go with mint.”This tangy, versatile dressing is perfect on a fruit salad or green salad or sauce for a fish!
Servings: 2 people
Ingredients
- 25 big fresh mint leaves
- 1 tbsp Vegan hUNey™ Raw
- 3 tbsp Olive oil
- 2 tbsp fresh lemon juice
- pinch of salt
Optional:
- 2 tbsp fresh orange juice
Instructions
- Cut half of the fresh mint into thin strips.
- Put the remaining mint, olive oil, honey, lemon juice, and salt into a blender and blend for a few seconds until the sauce has a smooth cloudy look.
- Add the cut mint and mix together. Chill the sauce for 10 minutes in the fridge and then use as a salad dressing or as a sauce with fish.
TIP:
- Add 2 tablespoons of fresh orange juice before blending to cut the tanginess of lemon.
