Strawberry chia pudding with coconut yogurt

QUICK, EASY, ADDICTIVE. Can be a perfect breakfast or a healthy dessert!

Ingredients

  • 2 cups milk of your choice (we recommend coconut milk)
  • 400 g fresh hulled strawberries or frozen or air-dried
  • 2 tsp Vegan hUNey™ raw
  • ½ cup chia seeds
  • 1 tsp vanilla extract
  • 2 tsp  almond butter  (tip for breakfast option)
  • 1 tsp cinnamon (optional)

For topping:

  • vegan coconut yogurt, fresh straberries, sliced almonds

Instructions

  • Puree strawberries, milk, Vegan hUNey™, vanilla extract and optional cinnamon or almond butter in a blender until smooth.
  • Taste and add more sweetener if needed.
  • Pour into a glass bowl.
  • Stir chia seeds into the strawberry mix.
  • Leave to rest for 30 minutes, for pudding to form.
  • Top with vegan coconut yogurt, fresh strawberries and almonds.
  • Serve and enjoy!
