Honey glazed Halloumi cheese with figs

Ingredients

  • 2 tbsp Vegan Huney™
  • 2 tbsp fresh lemon juice
  • 2 package Halloumi cheese
  • 1/2 tsp dried oregano
  • 2 tsp fresh oregano
  • 1 tbsp coconut oil or oil of your choice
  • 4 fresh figs cut in halves

Instructions

  • Slice halloumi in 1 centimeter thick pieces.
  • In a small bowl, add the honey, juice of the lemon and oregano leaves. Mix well.
  • Add the haloumi slices and turn to coat.
  • Place the container in the fridge to marinate for as long as you can, a minimum of one hour. If you hurry, you can grill immediately.
  • Heat some of the coconut oil in a pan on medium heat. Once heated, gently place some of the halloumi cheese.
  • Saute/Grill halloumi for 1 minute on each side or until golden brown.
  • Add fig halves and sear for 30 seconds.
  • Transfer to a plate, scatter over the fresh oregano, and drizzle with the leftover honey mix.

Notes

SERVING TIP:
Serve with figs, tabouli, and spread with hummus on pita bread. Add option spinach, artichoke hearts, assorted olives or pine nuts.
