Chopped salad with honey turmeric dressing

Perfect veggie leftovers salad! Whatever bit of vegetables and nuts you have in your fridge - just throw them in!
Sorry no jokes this time, this is real food zero waste!

Servings: 2 people

Ingredients

SALAD

  • 1/2 head cauliflower, roasted
  • 2 cup  purple cabbage, shaved
  • 2 carrots, grated
  • 1 red pepper chopped
  • 1/2 cup toasted almond slices
  • garnish pulled parsley leaves or cilantro

DRESSING

  • 1/2 cup extra virgin olive oil
  • 1/2 tsp salt
  • pinch black pepper
  • 2 tsp Vegan hUNey™️ Ginger Turmeric
  • 1/8 cup apple cider vinegar

Instructions

SALAD

  • Combine all fully cooled ingredients, toss the salad in the dressing, and serve!

DRESSING

  • Combine all of your ingredients in a large bowl.
    Use an immersion blender to fully combine. If you don't have an immersion blender, just combine all ingredients and slowly whisk in olive oil, OR just shake it all up in a jar with the lid on.
  • Either way, always shake to re-combine before serving.
